It's still actively fermenting when you drink it — meaning the cloudy, sweetish glass in your hand can keep fizzing and getting stronger as you finish it.

Freshly pressed grape juice caught mid-fermentation, cloudy and lightly sparkling with a mild alcohol kick, sold from roadside stands, market squares, and wine-cellar doorways across South Moravia every autumn.

Why it's made this way: Czech law allows burčák to be sold only from 1 August to 30 November and only from Czech-grown grapes, timed to the harvest, which is exactly what turns it into a genuine seasonal street-food event rather than a year-round product.
