Olomoucké Syrečky

These little cheese rounds are so strong-smelling that Czechs joke you can identify a market stall selling them from the other end of the square before you see it.

Small, ripened rounds of low-fat curd cheese with a pungent aroma and sharp, salty bite, sold plain with bread and onion, or as a spread, from cheesemongers' stalls around Olomouc and the surrounding Haná region.

Why it's made this way: It began in the town of Loštice as a way for farmhouses to use up all the milk they produced — the low-fat curd, aged and ripened, kept for months without refrigeration, and commercial production has continued there since 1876.
