In the Wallachian mountains, a bowl of this soup traditionally comes with the bread hollowed out to use as the bowl itself.
A sour, hearty soup of sauerkraut, potato, and smoked meat or sausage, ladled hot from pots at winter markets and mountain festivals throughout the Wallachian highlands.
Why it's made this way: It's built on cabbage and potatoes, two crops that stored well through harsh mountain winters in this sparsely farmed, pastoral corner of Moravia, making it a natural cold-weather market food.
