Zelňačka — street food from Valašsko (Wallachia), Czech Republic

In Wallachia the local version is called kyselica, often finished with sour cream or milk, and it has a reputation as a cure after a long night of drinking.

A sour, hearty soup of sauerkraut, potato, and smoked meat or sausage, ladled hot from pots at winter markets and mountain festivals throughout the Wallachian highlands.

Why it's made this way: It's built on cabbage and potatoes, two crops that stored well through harsh mountain winters in this sparsely farmed, pastoral corner of Moravia, making it a natural cold-weather market food.
