They're fried, not baked, in a shallow bath of lard or oil — closer kin to a doughnut than to the fluffy pancake the name might suggest.
Small, round yeast-dough discs fried until golden and puffed, then topped or filled with plum butter (povidla), curd cheese, or jam, sold warm at Czech farmers' markets and fair stalls.
Why it's made this way: It's an old-fashioned farmhouse treat that used simple pantry staples — flour, yeast, and fruit preserves — and it's stayed a market and fair favorite because it fries up fast for a crowd.
