Chivo Liniero (Azua-Style Goat Stew)

The goats used are free-range animals raised on Azua's dry, scrubby "linea" pastureland, and locals insist that terrain gives the meat a distinct, less gamey flavor than goats raised elsewhere in the country.

Goat meat marinated in bitter orange, garlic, and oregano, then slow-stewed with root vegetables until tender, ladled out at roadside comedores along the highway through Azua.

Why it's made this way: Azua's arid plains have long supported goat herding, and chivo liniero, named after the free-ranging herds, is the province's best-known culinary export nationwide.
