Cocadas Esmeraldeñas

Esmeraldas's version is often tinted bright pink or brown using local fruit or panela rather than left plain white, making the candy visually distinct from cocadas sold elsewhere in Latin America.

Grated coconut is cooked down with sugar or panela until it forms a sticky, chewy candy, then shaped into small domes. Beach vendors along Esmeraldas sell them from baskets or coolers.

Why it's made this way: Coconut palms line Esmeraldas's Pacific coast, and cocadas are one of the clearest street-food expressions of the province's Afro-Ecuadorian heritage.
