Yuca con Merienda (Cassava with Pork Offal Sauce)

Yuquería La Uno at the entrance to Ahuachapán has sold yuca with merienda from the same spot for more than 40 years, with customers choosing their own pork cuts from cheek to tripe.

Soft-cooked cassava topped with merienda, a thick pork stew of head, heart, ears and feet cooked with spices and toasted bread ground by hand on a stone. Vendors in Ahuachapán sell it from mid-afternoon in streets, plazas and home doorways, served with curtido and salsa.

Why it's made this way: Yuca is called the typical dish of Ahuachapán, where it is served with merienda, while neighbouring Chalchuapa prefers it with chicharrón.
