Boiled shrimp piled into a tall cup with a chilled tomato-ketchup-lime sauce, onion, and cilantro, often topped with avocado. La Libertad's beachfront and pier vendors sell it as a cooling snack through hot afternoons.

Why it's made this way: La Libertad's status as El Salvador's main Pacific fishing port and surf town built an entire economy of quick, chilled shellfish snacks sold to fishermen's families and beachgoers alike.
