Fishermen sell their catch directly off the boats at La Unión's dock each morning, so the fish frying at nearby stalls a few hours later can be only hours out of the water.

A whole fish, scored and fried until the skin crackles, served with rice, fried plantain, and a tangy cabbage curtido. La Unión's dockside comedores fry it fresh to order.

Why it's made this way: La Unión's working fishing port makes it one of El Salvador's most reliable sources of same-day Pacific catch, and its street stalls built their identity around fish this fresh.
