Cooks add whole crab, shell and all, straight into the pot, so diners end up cracking it open by hand right at the table mid-meal.

A tomato-based broth loaded with shrimp, crab, fish, and whole clams, simmered with plantain and yuca. La Unión's port-town cocinas sell it by the bowl, finished with a squeeze of lime.
