Panes Candy began more than 50 years ago as a small table at Portal Prunera in central San Miguel, and its sauce recipe is still a family secret.

French bread stuffed with a piece of stewed chicken, a whole boiled egg, beet, cucumber, tomato, radish, pickled onion, curtido and mayonnaise, soaked in a house sauce. Long-running family stands in central San Miguel sell them through the day.

Why it's made this way: The stuffed bread is often called pan migueleño after the city, and La Prensa Gráfica counts San Miguel's pan con gallina stands as part of the city's cultural legacy.
