Totopostes y Tustacas de Chinameca

Doña Fran and Don Tomás, the couple behind one of Chinameca's best-known ovens, have been baking totopostes and tustacas since 1956.

Totopostes are small salty balls of cooked, ground corn and lard, and tustacas are flat sweet rounds with brown sugar in the centre. Both are baked for up to three hours in wood-fired ovens in Chinameca and sold by the bag to eat with coffee or milk.

Why it's made this way: They are the signature snack of Chinameca, a town in San Miguel department, where families have baked them since about 1950 and sell them across eastern El Salvador.
