The Princesa Chilonet whose coronation it accompanies represents the spirit of tender corn that watches over the crops.
Beef simmered with sour orange juice, chiltepe chiles, yuca, ayote, fresh corn and cabbage, seasoned with oregano and alcapate leaves. In Izalco it is ladled out at cofradía celebrations each August, and some local cooks sell it through the year.
Why it's made this way: Chilayo is an ancestral dish of Izalco's Nahua-Pipil community, eaten at the Cofradía de la Virgen de la Asunción on 16 August and at the coronation of the Princesa Chilonet held by the Alcaldía del Común around Indigenous Peoples' Day.
