Unlike most Salvadoran tamales, pisques are deliberately plain — no meat, no filling beyond bean paste — which is exactly why they're the everyday breakfast choice.

Small corn-masa tamales filled only with a smear of refried bean paste, wrapped in banana leaf and steamed. Sonsonate market vendors sell them stacked in baskets each morning alongside coffee.

Why it's made this way: Sonsonate's Sunday market culture built a whole tier of simple, inexpensive tamales meant for quick breakfast eating, and pisques remain the market's everyday staple.
