Unlike mtsvadi's whole chunks of meat on a skewer, kababi is seasoned minced meat molded straight onto the skewer, then wrapped in flatbread to eat on the move.

Minced beef or pork is seasoned with onion and spices, pressed onto skewers, and grilled over open coals, then slid off into a sheet of warm lavash with onion and herbs. Grill stands throughout Kakheti's wine towns sell it wrapped as a handheld street meal.

Why it's made this way: Kakheti's grilling culture runs alongside its wine industry, and kababi developed as the quicker, minced-meat counterpart to whole-cut mtsvadi.
