Fischbrötchen (Fish Roll)

The Bismarck herring often tucked into the roll is named after Chancellor Otto von Bismarck, a well-known fan of pickled herring.

A crusty white roll stuffed with pickled or smoked fish — usually matjes herring, Bismarck herring, or salmon — along with onions, pickles and a tangy sauce. Sold from harbor kiosks along Germany's North and Baltic Sea coasts.

Why it's made this way: It grew out of the practical need to feed 19th-century fishermen and dockworkers a cheap, portable meal made from the day's catch, and the format has stayed essentially unchanged since.
