Hamburg's dockworkers were eating grab-and-go fish rolls a century before 'fast food' was even a phrase.
A crusty white roll stuffed with pickled or smoked fish — usually matjes herring, Bismarck herring, or salmon — along with onions, pickles and a tangy sauce. Sold from harbor kiosks along Germany's North and Baltic Sea coasts.
Why it's made this way: It grew out of the practical need to feed 19th-century fishermen and dockworkers a cheap, portable meal made from the day's catch, and the format has stayed essentially unchanged since.
