Regional rivalries run deep — cross into the Rhineland and the same pancake is defended fiercely under its other name, Reibekuchen.

Raw potatoes are grated, wrung dry, and mixed with onion, egg, and a little flour, then fried in shallow oil until the edges turn deep golden and crisp while the center stays soft. Christmas market and beer garden stands fry them fresh to order and hand them over dusted with sugar or topped with applesauce.

Why it's made this way: Potato pancakes spread across German-speaking Europe in the 18th and 19th centuries as the potato itself became a staple crop, turning a cheap, filling vegetable into a fast street snack that could be fried in bulk for market crowds.
