Almost nothing goes to waste — the same seal that ends up as puisi meat in a stew also supplies the skin, oil, and blubber that Greenlandic households still use.
Dark, lean seal meat is cut into steaks or cubes and either pan-seared quickly or simmered into a stew with onions and potatoes, giving a rich, slightly liver-like flavor. It's sold whole and in cuts at Nuuk's open-air Kalaaliaraq market, where hunters bring in the day's catch directly from the fjord.
Why it's made this way: Seal hunting has sustained West Greenland's coastal towns for generations, and Nuuk's Kalaaliaraq market remains the clearest place to see that hunt turn straight into a meal, sold by the same people who caught it.
