Choluteca sits on Honduras's only Pacific coastline, so its shrimp come from the Gulf of Fonseca's estuaries rather than the Caribbean shrimp used elsewhere in the country.

A tomato-based soup loaded with whole shrimp, yuca, plantain, and chayote, simmered until the broth turns orange and fragrant. Choluteca's market cocinas keep pots going all morning.

Why it's made this way: Choluteca's position on the Gulf of Fonseca gives it Honduras's only real Pacific seafood economy, distinct from the Caribbean coast dishes found elsewhere.
