The shores of the Gulf of Fonseca around Choluteca are lined with shrimp farms, and farmed shrimp is one of Honduras's biggest food exports.

A tomato-based soup loaded with whole shrimp, yuca, plantain, and chayote, simmered until the broth turns orange and fragrant. Choluteca's market cocinas keep pots going all morning.

Why it's made this way: Choluteca's position on the Gulf of Fonseca gives it Honduras's only real Pacific seafood economy, distinct from the Caribbean coast dishes found elsewhere.
