In Honduras torrejas are made at Christmas and again during Semana Santa, the weeks when Comayagua fills its streets with elaborate sawdust carpets for the processions.

Slices of day-old bread soaked in beaten egg, fried, then drenched in a cinnamon-and-clove spiced sugar syrup. Comayagua vendors sell them from trays during Holy Week processions.

Why it's made this way: Comayagua's deep Spanish colonial religious traditions, including one of Honduras's most elaborate Holy Weeks, carry torrejas as their signature seasonal street sweet.
