The name likely comes from "journey cake" — a portable bread English-speaking Caribbean sailors carried on long voyages, which is exactly how it reached the Bay Islands.
A dense, slightly sweet fried or baked bread roll, split open and eaten with butter, cheese, or alongside fried fish. Island vendors sell them warm from home stands, especially at breakfast.
Why it's made this way: English-speaking Bay Islanders, descended from Cayman Island settlers, brought this Caribbean bread with them, distinct from anything on the Spanish-speaking mainland.
