The name is often traced to 'journey cake', a bread that kept well for travel, though the origin of 'johnny cake' is disputed.
A dense, slightly sweet fried or baked bread roll, split open and eaten with butter, cheese, or alongside fried fish. Island vendors sell them warm from home stands, especially at breakfast.
Why it's made this way: English-speaking Bay Islanders, descended from Cayman Island settlers, brought this Caribbean bread with them, distinct from anything on the Spanish-speaking mainland.
