Olancho is Honduras's largest department and its biggest cattle producer, and locals half-jokingly call it the country's "Wild West" for its ranching, cowboy-hat culture.

Thin-cut beef, salted and grilled fast over open charcoal, served with fried plantain, avocado, and warm corn tortillas. Roadside comedores throughout Juticalpa and Catacamas grill it right at the counter.

Why it's made this way: Olancho's vast savanna and ranching economy make it Honduras's cattle country, and open-fire grilled beef is the department's default street and roadside meal.
