No pot and almost no oil: marinated chicken is packed into a green bamboo tube, sealed and roasted over charcoal, cooking in its own juices.
Chicken marinated with chilli, turmeric, ginger-garlic and salt, sealed in green bamboo and roasted over coals, sold at small bamboo roadside stalls along the Visakhapatnam–Araku road.
Why it's made this way: It is a traditional dish of the tribal communities of the Eastern Ghats and has become the signature food of Araku Valley in Alluri Sitharama Raju district.
