The same puffed-rice dish goes by many names: uggani, vaggani or borugula upma in Andhra, and oggane across the border in Karnataka.

Uggani, soaked puffed rice (borugulu) seasoned with onion, green chilli, turmeric and roasted gram, served with hot mirchi bajji at breakfast tiffin counters.

Why it's made this way: It is a signature breakfast of the Rayalaseema region of Andhra Pradesh, especially Anantapur, Kurnool and Kadapa.
