Eri Polu (fried silkworm pupae)

Eri silk is spun from open cocoons, so the silk can be taken without killing the insect; pupae meant for eating are picked out of the cocoon by hand and fried with ginger, garlic and chilli.

Pupae of the eri silkworm fried until crisp outside and soft inside, sold by the plate as a snack at a few stalls in Guwahati; raw pupae are sold by weight in local markets.

Why it's made this way: Assam produces about two-thirds of India's eri silk, and eating the pupae is an old tradition among Assamese and tribal communities of the Brahmaputra valley.
