In India's biggest tea-growing state, the everyday street cup skips the milk: the leaves are simply boiled until the brew turns deep red-brown.
Strong black tea, often with a little sugar, poured into glasses at roadside tea stalls (saah dukan) across Assam and drunk with pitha or fried snacks.
Why it's made this way: Assam is India's largest tea-growing state, and red tea from the neighbourhood tea stall is the daily drink across the state.
