The filling is sattu, roasted chickpea flour, the same ingredient Bihar also drinks as a summer cooler.

Whole-wheat dough balls stuffed with spiced sattu, roasted over coals, dipped in ghee and eaten with chokha, a mash of roasted aubergine, potato and tomato with mustard oil.

Why it's made this way: It is the signature dish of Bihar and eastern Uttar Pradesh, and roadside litti stalls are found across the state.
