The filling is sattu, roasted gram flour, the same ingredient that goes inside litti and into Bihar's summer sattu drink.
Small, crisp deep-fried pastry puffs stuffed with spiced sattu, sold hot at breakfast from kachori shops in Patna and served with a spicy black-chickpea ghugni.
Why it's made this way: Sattu is the backbone of Bihari cooking, and sattu-filled kachori with ghugni is a standard Bihari street breakfast.
