It is essentially flour in water: roasted chickpea flour whisked into a drink that works as a quick, filling meal on a hot day.

Sattu stirred into cold water with lemon, salt and roasted cumin (or sweetened with jaggery), poured at street carts through the summer.

Why it's made this way: Sattu is central to Bihari food identity, and the sharbat is Bihar's standard street-side answer to the summer heat.
