Old Delhi's tikki vendors fry the patties on a well-seasoned iron griddle that's rarely, if ever, scrubbed clean — cooks say the built-up layer of oil and spice from years of use is part of what gives their tikki its flavor.

Mashed, spiced potato patties are shallow-fried on a flat griddle until a deep golden crust forms, then topped with chickpea curry, whisked yogurt, tamarind and mint chutneys, and a scatter of chopped onion and sev. Vendors across Delhi assemble it to order on a disposable plate for eating right at the cart.

Why it's made this way: Aloo tikki is considered one of Delhi's signature chaats, and its layering of a fried potato base with multiple chutneys and toppings reflects the North Indian chaat tradition that the city is best known for nationally.
