Goa's choris descends from Portuguese chouriço but is made with palm vinegar, feni and far more chilli, then sun-dried or smoked.

Spicy Goan pork sausage cooked with onion (often potato too) and stuffed into a pão or poi bun, sold at church feasts such as the Feast of St Francis Xavier, fairs and snack stalls.

Why it's made this way: It is one of the clearest traces of Goa's Portuguese past, and the sausage bun is a standard feast-day stall snack.
