Ros means gravy in Konkani, and the dish is sold from gaddos, wooden push-cart stalls that open around 6 pm and close when everything is sold.
A masala omelette drenched in spicy coconut xacuti gravy, topped with onion and lime and eaten with soft Goan pão, sold from carts from evening until late.
Why it's made this way: It is a Goan street invention, found on gaddo carts across the state and rarely outside it.
