Kutch Original · Pressed Potato Bun

It was invented in the 1960s by a Mandvi vendor, Keshavji Gabha Chudasama, who sold it for just one anna a piece — and his original shop is still run by his descendants in the same small Kutch town today.
Spiced mashed potato is packed into a soft pav bun, pressed flat on a griddle, and loaded with tamarind-date chutney, garlic chutney, pomegranate seeds, and crushed roasted peanuts, sometimes finished with a scoop of sev. Street carts across Gujarat, and increasingly Maharashtra, sell it pressed to order.
Why it's made this way: The name literally means 'pressed' in Gujarati, describing the griddle step that's core to the dish, and its origin in one Kutch vendor's cart has kept Bhuj and Mandvi's versions regarded as the most authentic in the country.
