Tujj just means skewer, and on Srinagar's Khayam Chowk the meat is still grilled over burning coals.
Spiced mutton and chicken skewers grilled over charcoal and eaten with lavasa flatbread and chutneys, sold by grill stalls in the evening.
Why it's made this way: It is Kashmir's barbecue, and Khayam Chowk in Srinagar is the city's best-known barbecue street.
