Karnataka's cousin of bhel puri and jhal muri skips the tamarind and green chutneys; the mix is dressed with lemon, chilli and sometimes a few drops of coconut or groundnut oil.

Puffed rice (mandakki) tossed to order with onion, tomato, chilli, lemon juice and coriander, sold from carts and chaat stalls in Bengaluru, Mysuru and other Karnataka towns.

Why it's made this way: Also called mandakki or puri in Kannada, it is a well-known street snack of Karnataka, far better known there than elsewhere in India.
