Goli Baje

Unlike most Indian fritters, its batter is based on maida (refined flour) and curd, which gives it a soft, almost bread-like inside.

Round deep-fried balls of maida and curd batter with coconut, ginger and curry leaves, crisp outside and soft within, served with chutney and a cup of tea or coffee.

Why it's made this way: Also called Mangalore bajji, it comes from Tulu Nadu on the Mangaluru-Udupi coast, where tiffin rooms and eateries serve it with chutney and coffee.
