According to Swiggy's year-end data, parotta was the single most-ordered food item in Kerala in 2022, edging out even biryani locally — a remarkable rise for a bread some food historians think arrived in the region only a few generations ago via West Asian and Sri Lankan trade routes.

A maida dough is beaten, stretched paper-thin with oil, folded into layers, coiled, and rolled flat before hitting a hot griddle, producing a flaky, chewy bread that's pulled apart by hand into shreds. Roadside thattukadas across Kerala serve it with chicken curry, beef fry, or egg roast, often into the early hours of the morning.

Why it's made this way: Kerala historically grew little wheat, so the bread's arrival — likely through coastal or Sri Lankan trade rather than home tradition — makes its rise to one of the state's most popular street foods a genuinely recent culinary shift.
