It goes by at least three names depending on where you order it in Kerala — pazham pori, ethakka appam, or bajji — but it's the same batter-dipped fried banana either way.

Ripe nendran plantains are sliced lengthwise, dipped in a sweetened rice-and-flour batter, and deep-fried until the coating turns crisp and golden while the banana inside softens and caramelizes. Kerala's tea shops fry it fresh throughout the day and serve it hot alongside a glass of strong tea.

Why it's made this way: The dish relies on Kerala's nendran plantain variety, prized for turning sweet and custardy when fried, and it has become the default teatime snack at roadside chayakadas across the state.
