Kees means grated: fresh corn is grated and slow-cooked in milk until the milk is absorbed and the corn turns soft and savoury-sweet.

Grated corn slow-cooked with milk, green chilli, mustard seeds and turmeric, finished with lime and coriander, sold at Sarafa Bazaar and Chappan Dukan in Indore.

Why it's made this way: It is a Malwa preparation, and Indore's night market is where most visitors meet it.
