It is strictly a winter snack: purple yam is in season from about October to March, and that is when garadu carts appear in Sarafa Bazaar.
Chunks of purple yam boiled, then deep-fried until crisp and sprinkled with jeeravan masala, chaat spices and lemon, sold from small carts and stalls.
Why it's made this way: It is a winter street snack of Indore and the Malwa region, with Sarafa Bazaar a favourite place to find it.
