Unlike most poha, Indore's is steamed rather than stir-fried, and it is finished with jeeravan, a spice blend the city is known for.

Soft steamed poha piled with sev, raw onion and fennel seeds, sold by vendors across Indore in the morning, usually alongside hot jalebi.

Why it's made this way: It is the defining breakfast of Indore, sold by street vendors in the morning, and has spread across Madhya Pradesh and beyond.
