Mumbai's beachfront bhel vendors mix it entirely by hand in a big metal bowl, tossing for only a few seconds before serving — any longer and the puffed rice turns soggy in the wet chutneys.

Puffed rice is tossed with sev, chopped onion, tomato, boiled potato, and a mix of tangy tamarind and spicy green chutneys, all mixed together on the spot so the crunch doesn't have time to fade. Vendors along Mumbai's Chowpatty and Juhu beaches serve it in a folded paper cone or on a disposable plate.

Why it's made this way: Bhel puri became inseparable from Mumbai's beach culture, sold by vendors along Chowpatty since long before the city's other chaats gained the same citywide fame, and it remains one of the dishes most associated with a Mumbai evening out.
