Rolling it thin without tearing the dough is considered enough of a skill test in Maharashtrian households that it's sometimes treated as a rite of passage for a new cook to get right.

A sweet filling of cooked chana dal, jaggery, and cardamom is sealed inside a soft wheat dough, then rolled out thin and cooked on a griddle with a brushing of ghee until lightly browned. It's sold at sweet shops and stalls across Maharashtra, especially heavily around Holi and Ganesh Chaturthi.

Why it's made this way: Puran poli is one of Maharashtra's oldest festival sweets, traditionally made to mark Holi, and its presence at street sweet counters year-round reflects how far it's moved beyond just a home-kitchen specialty.
