Chhena poda means 'burnt cheese' in Odia, after the dark caramelised crust it gets from hours of baking.

Fresh chhena cheese, sugar and semolina baked until the outside caramelises, sold by the slice at sweet shops and stalls.

Why it's made this way: It was created after 1947 by a sweet-maker in Dashapalla, Nayagarh district, and Odisha has marked Chhena Poda Dibasa every year since 2022.
