Cuttack is nicknamed the dahibara-aloodum capital, and Odias mark Dahibara Aloodum Dibasa every year on 1 March.
Lentil vadas soaked in a thin tempered yogurt water, topped with spicy potato curry, pea ghuguni, onion and coriander, served in a leaf bowl by street vendors.
Why it's made this way: It is a street food of Cuttack, a local take on dahi vada that has spread to Bhubaneswar, Puri and the rest of Odisha.
