Punjabi Lassi

Some Punjab lassi stalls churn it so thick with cream that it needs a spoon as much as a straw — the Patiala style is famous for arriving with an extra slab of malai floating on top.

Yogurt is churned with water or milk into a thick, frothy drink, salted or more often sweetened, and served ice-cold in a tall glass or a disposable clay kulhad. Roadside dairy stalls across Punjab churn it fresh to order, often topped with a spoon of clotted cream.

Why it's made this way: Lassi is believed to trace back thousands of years to Punjab's dairy-farming villages as a cooling, digestion-easing drink suited to the region's hot climate, and locals still consider it their invention above any other regional claim on it.
