Jodhpur's kachori shops usually sell it alongside mirchi bada, a fat green chili stuffed with spiced potato and fried in gram-flour batter — the city's other breakfast fritter.

A maida dough is stuffed with a spiced onion filling (often blended with a touch of mashed potato), sealed, and deep-fried until deeply golden and flaky, then served split open with a ladle of potato curry and a spoon of tamarind and green chili chutney. Jodhpur's roadside stalls fry them fresh through the morning for breakfast crowds.

Why it's made this way: Kachori is made across North India, but Rajasthan's Marwar region made the onion-stuffed version its own, and Jodhpur's pyaaz kachori became its most famous variant.
